Strawberry Rhubarb Pie Recipe

One of our favorite ways to use our rhubarb is making pie. Nothing beats homemade warm pie fresh from the oven with a scoop of French Vanilla ice cream. We usually get a harvest of rhubarb in June and again early August and depending on the year I can sometimes get a fall harvest as well. The recipe I will share is one of my families favorites; you can choose to make your own crust however I cheated and bought the frozen pie shells and the Pillsbury pie tops. 

 MAKES 4 LARGE PIES

8 Cups Chopped Rhubarb

3 Cups Chopped Strawberries

2.5 Cups White Sugar

3\4 Cup Flour

 

PREHEAT OVEN TO 375

1) Prep your rhubarb and strawberries by washing and cutting place in a bowl

2) Mix Sugar and four in a bowl and add any spice you may want. I like to add a few sprinkles of cinnamon for taste

3) Take your dry sugar/flour mixture and sprinkle some in the bottom of each pie shell. I find this helps so the bottom crust doesn't get too soggy as rhubarb has a lot of water in it.

4) Place rhubarb/strawberry mixture into pie shells evenly dispersed among all 4 pies, then spread the remaining sugar/flour mixture on top.

5) Cover pies with pie tops and make a few slices through the pie top to allow the pie to breathe. Or you can make a fun design this is the fun part!

6) Place in oven to bake. I find they take anywhere from 30 min to an hour depending on oven however when the crust is turned golden brown and you see juices coming out the top its usually ready. If you find the top is getting to cooked cover with tinfoil or lower your oven to 350. 

7) Remove pies and allow to sit before serving. You can also allow to cool and wrap and freeze for a future occasion.
