Canned Sweet Homestyle Pickled Beets

You can feel the cooler weather upon us as we start to notice the leaves change from green to bright gold, yellow and red. The sun sets early this time of year and you know winter is right around the corner when we get that cool North Wind. This time of year is busy cleaning up the yard for winter and of course the Garden harvest. This summer we enjoyed red lettuce, romaine lettuce, butter lettuce, white potatoes, spinach, squash, fresh raspberries and peas through out the season which left us with beets, cucumbers, peppers, carrots, and dill to pickle. Of Course we still have pumpkin to harvest but we will try to hold off a little longer to see if we can get them to color up a bit more! 

So we used a very simple recipe for our beets:

HOMESTYLE SWEET BEETS

6 quarts beets                                 

 Wash & Prep your beets (We blanched ours to peel then sliced)

  • After add all your ingredients except for the beets into a sauce pan and begin to boil until sugar is all dissolved. 
  • Prep your hot water bath and your stylized jars
  • Add sliced beets to your jars and add Vinegar mixture to jars
  • Place lids on jars and start your hot bath method. 
  • Once our water started to boil we put a timer on for 10 minutes.
  • Remove jars from water and allow to sit and cool. The lids will pop on there own some will be right away others may take a few hours.

4 cups water

4 cups vinegar 

2 cups white sugar

3 cinnamon sticks

3 Tbls All Spice Seasoning

STORE IN COOL DARK SPACE & ENJOY!
